Where there is a blank for gender - do we just put ? or what? (and do we record gender and adult/juvenile/immature) (I have noted them)

Unsure what to do as outlined above - on the basis that the information if available should be recorded, I have, but I would like to know. Also, is there any way to retrieve pages that have been inadvertently lost prior to being completed?
