how do you transcribe when there are multiple labels with different scientific names and collection dates/collectors?

Thanks for your work. Use the name on the most recent label and ignore the others. There will only be one collection date, though. This is on the original label. The other dates are the dates on which the annotations (additional labels) were made.

I put the latest one first, then the earlier ones (include the original) in parentheses. If that is not correct, I'd love to be corrected.
